Pasta Primavera

Prep Time: 10 minutes
Cook Time: 20 minutes

1 can of Condensed Cream of Mushroom with Roasted Garlic & Herbs Soup
½ cup milk
3 tablespoons grated Parmesan cheese
1 tablespoon lemon juice
1/8-teaspoon pepper
3 cups cut-up vegetables
2 cups hot cooked spaghetti

1. In medium skillet mix soup, milk, cheese, lemon juice, and pepper. Over medium heat, heat to a boil.
2. Add vegetables. Reduce heat to low. Cover and cook 15 minutes or until vegetables are tender, stirring occasionally. Toss with spaghetti.

For vegetables you can use a combination of healthy vegetables such as broccoli, cauliflower, and green and red peppers.

This recipe serves 4.

Tip: Parmesan cheese packs a lot of flavor in a small amount and presents a healthier alternative to butter or oil to flavor pasta, potatoes, and salad.
